Guacamole

There's nothing quite like homemade guacamole and this recipe uses only fresh, authentic ingredients. All you need are ripe avocados, onion, tomatoes, cilantro, jalapeno, and garlic. Mix them all together and you're done!


Our family grew up in Southern California where Cinco de Mayo is celebrated every year and Mexican food is popular and easily accessible, so we know a good guacamole when we see one. And believe me, once you make this recipe, you won't go back to the store-bought processed guacamole ever again!


The most important part to making good guacamole is making sure the avocados are ripe, but still slightly firm, so you don't end up with a mushy dip (something that I know of from experience, unfortunately). Also, make sure you don't substitute the Roma tomatoes with any other brand of tomatoes (again, something I learned from experience), otherwise you'll end up with runny guacamole. I usually scoop out the tomato seeds, then dice them up before I add them in. Stir in the rest of the ingredients and then finish by seasoning with salt and pepper to taste. Easy and delicious!

GUACAMOLE

Ingredients:

  • 4 ripe Hass avocados

  • 1/2 cup finely chopped red onion

  • 2 large Roma tomato, seeded then diced

  • 3 tablespoons cilantro, finely chopped

  • 1/2 - 1 jalapeño pepper, seeded and minced

  • 2 garlic cloves, minced

  • 1 lime, juiced

  • Salt and freshly ground black pepper, to taste

Instructions:

  1. Slice the avocados in half, remove the pit and the skin then add them to a medium bowl and mash with a fork until desired texture. 

  2. Mix in red onion, tomato, cilantro, jalapeño, garlic, and lime juice. Season with salt and pepper to taste. 

  3. Refrigerate for 1-2 hours before serving.
